We tried our purple potatoes. They look very original on the plate!
The taste is no different from regular potatoes. If I ate it with my eyes closed, I wouldn’t have guessed it was any different. It’s tasty, holds its shape when boiled but isn’t tough and it fries well too. The water after boiling is a beautiful azure-green color. I liked the taste of the potato.
I’d like to remind you that purple potatoes contain anthocyanins, which are powerful antioxidants. These anthocyanins protect the body from UV rays and radiation, reduce the risk of cancer and consequently slow down the aging process! In comparison, purple potatoes have been found to contain more anthocyanins than berries and red wine!
