New Year's is the time for ginger to ripen and for planting tubers for the new harvest. Right now, you can buy them in the store and plant them in small pots.



Ginger will take about a month to wake up, and then it will start growing. It grows on the windowsill until summer, then it is transplanted into larger pots and moved to a greenhouse, where it continues to grow until the first frost. In the fall, it returns to the windowsill and keeps growing until the New Year's holidays. When the leaves dry up, it's a sign that the harvest is ready.



I plant four small tubers, making sure they have top buds.



The harvest from this amount is about 1.5 kg.



I pickle the tubers in thin slices with beetroot, and it’s very tasty. I also make a vitamin mix from ginger, lemons, and honey, using 300 grams of each ingredient. The ginger and lemons are passed through a meat grinder, then mixed with honey. I take a teaspoon of this mixture in the morning on an empty stomach, dissolving it in a glass of warm water.



I dry some of it and add the powder to baked goods. The rest I wrap in foil and store in the vegetable compartment of the refrigerator. It keeps for 3-4 months this way. As needed, I cut off slices for tea or pickle it again.



By the way, I've noticed that some roots are more productive (probably different varieties), so now I take those for planting. So, if you decide to try it, it’s worth buying ginger from different places and choosing the most productive one.
